The tomato relish adds just the right amount of flavor



1.   For relish, combine all the ingredients in a bowl and set aside.

2.   Using a pan large enough to hold salmon steaks, bring water to a boil and add peppercorns, lemon slices, parsley, onion, and bay leaf.

3.   Lower heat to a gentle simmer, cover, and let flavors infuse for 5 minutes. Add salmon steaks and make sure they are covered with water. Add additional water if needed.

4.   Cook, uncovered, for 10 to 12 minutes or until fish is just tender. It will flake easily when tested with a fork. Never let water boil or fish will toughen.

5.   Divide the relish on four plates.




Spicy Tomato Relish                                    Salmon

n2 medium tomatoes, chopped n2 tablespoons yellow onion,

inely chopped
n 2 tablespoons fresh parsley, inely chopped

n 1 teaspoon red pepper lakes, or to taste

n4 5-ounce salmon steaks n3 cups water

n4 black peppercorns n1 lemon, thickly sliced n3 parsley sprigs

n1 small onion, thickly sliced n2 bay leaves


n¼ cup red wine vinegar n2 tablespoons olive oil nblack pepper, to taste

This fresh and tasty salad will delight all.



n1 medium Granny Smith apple, sliced thinly (with skin) n 2 tablespoons lemon juice

n 1 bag (about 5 cups) mixed lettuce greens (or your favorite lettuce)

n½ cup dried cranberries n¼ cup walnuts, chopped

n¼ cup unsalted sunlower seeds
n⅓ cup low-fat raspberry vinaigrette dressing


1.   Sprinkle lemon juice on the apple slices.

2.   Mix the lettuce, cranberries, apple, walnuts, and sunflower seeds in a bowl.

3.   Toss with ⅓ cup of raspberry vinaigrette dressing, to lightly cover the salad.


The seasonings are perfect companions to the green beans.



1.   Rinse green beans and snap off tips.

2.   Place green beans in a large pot and add ½ cup of cold water.

3.   Cook green beans on stovetop over medium heat for 10 minutes.

4.   In a separate pan, saute chopped onions and garlic, using the cooking spray, for 5 minutes or until they are tender and very lightly browned.

5.   Add onions, garlic, and black pepper to green beans. Spray the cooking spray over mixture, and cook on medium heat for
another 20 minutes or until green beans are tender, but not soft.
Stir occasionally.

6.   Sprinkle dried basil and oregano over green beans. Mix and serve.

n2 pounds fresh green beans n½ cup water

n⅓ cup onions, chopped n4 cloves garlic, chopped nnonstick cooking spray n½ teaspoon black pepper n½ teaspoon dried basil n½ teaspoon oregano
